THE PROCESS OF MAKING TOFU

The first is preparing the tools process. The barrels and the buckets are needed as the container of the ‘sari tahu’. The grinding machine is required in grinding process. The huge cattle, some fire woods and wood sticks are needed in cooking process. The mori fabric and tofu printer are needed for printing process. Beside those tools, a knife and a ruler are needed in the last process.
The second is preparing the materials process. Seven kilograms of soybeans are winnowed and washed to eliminate the bad one. After that, the soybeans are submerged in the barrel for four hours. Two scoopful of sakaw, two spoonful of soda and ten litters of vinegar are mixed in another barrel.
The third is cooking process. The soybeans are milled finely ground by milling machine. After ground, the milk of soybeans will be produced. The milk of soybeans is accommodated in the pail. And then, the fire woods are set to start cooking. The milk of soybeans is boiled in the huge cattle until it boil. The boiling milk of soybeans is stirred by using a wood stick. This process is repeated 3 times, so the milk of the soybeans is well cooked
The fourth process is refining tofu. The boiled milk of soybeans is refined by mori fabric which is hung at the hooks. Soya bean and waste will be resulted in this process. The waste is watered to redo the refining process in order to get more soya bean.
The fifth is processing soya bean sedimentation. Soya bean is taken in the barrel where sakaw, soda and vinegar were mixed before. Soya bean, sakaw, soda and vinegar are stirred. This process is intended to sediment the clod of soya bean, then, the sediment soya bean clod is pressed to seperate it from vinegar. At last, the vinegar is removed from the barrel.
The sixth is tofu printing process. The clod of soya bean is poured to the tofu printerwhich is covered by mori fabric. The tofu printer is pressed by a big stone for two minutes. It function to squeeze all of the water which is still contained in the clod of the tofu. After the mixture of the tofu has condensed, the tofu is removed from the printer
The last is packaging process. The tofu is cut into some size
